Temporal Dominance of Sensations (TDS) is a time-dynamic sensory evaluation method developed by Pineau and colleagues in 2009 that tracks which sensory attribute is perceived as dominant at each moment during the consumption of a food product. Unlike static descriptive methods, TDS captures the dynamic evolution of flavor, aroma, and texture sensations from the initial bite to swallowing, providing insight into the temporal structure of the eating experience.

TDS is ideal for products where the sensory experience evolves significantly during consumption—chocolate, chewing gums, beverages, yogurts, crackers, and other foods with complex, multiphase sensory profiles. Use TDS when you want to understand the dynamic sensory appeal of a product, optimize texture transitions, or identify which temporal phases drive consumer satisfaction. What is the difference between TDS and time-intensity?
Time-intensity tracks the intensity (strength) of a single attribute over time, producing a curve showing how strong an attribute is at each moment. TDS tracks dominance—which attribute is most prominent at each moment among several attributes. TDS is typically faster and more intuitive for panelists, while time-intensity provides fine intensity dynamics.
How do you define 'dominance' exactly?
Dominance is typically defined as 'the sensation that is most noticeable or stands out most to you right now.' Panelists can respond to the immediate moment (coarse dominance) or continuously (fine dominance). Training should clarify that dominance is not about intensity or liking, but about which sensation is foremost in perception at each instant.
How many attributes should be included in a TDS evaluation?
Typically, 5-12 attributes are used. Too few attributes may miss important aspects of the eating experience; too many overwhelm panelists and produce noisy, uninformative curves. The optimal number depends on the product complexity and panelist cognitive load.
How long do panelists evaluate a sample in TDS?
Typically, panelists hold a sample in their mouth for 5-20 seconds, depending on the product and how quickly sensations fade. Chocolate might be 15-20 seconds; a thin liquid might be 5 seconds. The duration should reflect the natural eating/swallowing timeline for that product.
Can TDS be used for non-food products?
Yes. TDS has been applied to pharmaceuticals (tracking the dynamic taste experience of tablets or syrups), cosmetics (tracking sensory evolution of creams or lotions), and other products where sensory experience evolves during use.
