সেলুলোজের কেলাসত্ব বলতে সেলুলোজ অণুর কাঠামোগত শৃঙ্খলার মাত্রা বোঝায়: উচ্চ কেলাসিত সেলুলোজে সুসংগঠিত, ঘন সন্নিবিষ্ট শৃঙ্খল থাকে; অনিয়ন্ত্রিত সেলুলোজে বিশৃঙ্খল শৃঙ্খল থাকে। এক্স-রে অপবর্তন দ্বারা পরিমাপ করা সেলুলোজের কেলাসত্ব মণ্ড তৈরি এবং এনজাইমেটিক প্রক্রিয়ায় কাঠের শক্তি, দৃঢ়তা এবং হজমযোগ্যতাকে প্রভাবিত করে। উচ্চতর কেলাসত্ব বেশি শক্তি এবং কম রাসায়নিক বিক্রিয়াশীলতার সাথে সম্পর্কিত।
