An in-store food availability audit is a structured observational protocol in which a trained auditor physically visits a food outlet and records, against a predefined checklist, which foods are stocked, at what prices, and in what condition. It is the general field-audit method that underpins much food-environment research: rather than inferring access from business listings, the auditor walks the aisles and documents reality. The approach was crystallised by validated instruments such as Glanz, Saelens and colleagues' Nutrition Environment Measures Survey, but the audit logic — define an item list, sample outlets, train raters, observe systematically, and check reliability — is a reusable protocol that researchers adapt to corner stores, supermarkets, markets, pharmacies and informal vendors. When to use it

Use an in-store food availability audit when you need accurate, on-the-ground evidence of what foods are actually stocked, priced and of what quality inside specific outlets, and secondary listings are too coarse or unreliable. It suits studies that must characterise a particular set of stores (corner shops, supermarkets, markets, informal vendors), evaluate retail interventions by observing before and after, validate index-based measures like the mRFEI, or adapt an item list to a local or cultural context that off-the-shelf instruments miss. It is less appropriate when broad national coverage matters more than depth (an index from business data is more scalable), when fieldwork is infeasible for safety, cost or access reasons, or when the research question concerns the whole food system rather than retail outlets. Choose or adapt a validated instrument where one fits, and always budget for rater training and reliability testing.

Auditors are trained and calibrated against a gold-standard rater before fieldwork, and during the study pairs of auditors independently re-audit a subset of outlets so inter-rater agreement can be computed with kappa statistics and intraclass correlation coefficients. Reporting these statistics, and retraining when agreement is weak, is what justifies interpreting the scores as properties of the stores rather than artefacts of who did the auditing.
